So, here's the deal.  I'm a relative newbie to the world of BBQ.  Sure, I've had a grill for years, like any other red-blooded American Dad (tm).  But, I pretty much used that baby for searing steaks and burgers and whatnot.  I did notice, however, that whenever I tried to make ribs, or something that took slow cooking, that I pretty much made a mess of it.

Fast forward to the summer of 2011.  I was in Wisconsin with my in-laws and my brother-in-law made some killer ribs on a Brinkman charcoal water smoker.  I was instantly fascinated.  Well, I got my kick-start in September of 2011 when the same brother-in-law (and his family) got me a brand new Brinkman smoker for my birthday.  In fact, on my actual birthday party, I was pretty much obsessed with checking the brisket and bratwurst that I was trying to smoke.

Anyway, I created this site to try and document my journey and hopefully you can see what I did wrong and what I might have done right and find out for yourself how fun BBQ is.
