Bourbon Bacon Brisket Burnt Ends

  • 3 lbs brisket point
    Trimmed
  • 1 tbsp
    Kosher Salt
  • 1 tbsp
    Black Pepper
  • 1 tbsp
    Brown Sugar
  • 1 tbsp
    Chili Powder
  • 1 tsp
    Onion Powder
  • 4 slices thick-cut bacon
    Chopped
  • 0.5 cup
    Bourbon
  • 0.5 cup
    BBQ Sauce
  • 2 tbsp
    Butter
  • 1 tbsp
    Maple Syrup
Directions
  • Smoke the Brisket

    Season brisket point with salt, pepper, brown sugar, chili powder, and onion powder.
    Smoke at 250°F for 5–6 hours until internal temp hits 190°F.

  • Make the Burnt Ends

    Cut brisket into cubes. In a foil pan, mix cubes with chopped bacon, bourbon, BBQ sauce, butter, and maple syrup.
    Return to smoker uncovered for 2 more hours, stirring occasionally until caramelized and tender.

  • Serve and Enjoy

    Serve with cornbread, pickles, or over mashed sweet potatoes. Each bite is smoky, boozy, sweet, and unforgettable.
