- Marinate the Chicken
Blend all ingredients (except chicken) into a marinade. Coat chicken quarters thoroughly and marinate at least 4 hours, ideally overnight.
- Grill Low and Slow
Set grill for indirect heat around 300°F. Place chicken skin-side up and cook for 30 minutes. Flip and continue cooking until skin is crisp and internal temp reaches 165°F.
- Serve Island Style
Serve with rice and peas or fried plantains. These bring fiery heat, deep flavor, and juicy chicken with a punch.
