- Make the Sauce
In a bowl, whisk together coconut milk, red curry paste, fish sauce, garlic, lime zest, and lime juice.
- Build the Packets
Place mussels in foil packets and pour sauce over evenly. Seal packets tightly.
- Grill the Packs
Grill over medium-high heat for 10–15 minutes, until mussels open and steam escapes.
