Charred Corn and Jalapeño Bacon Skillet

  • 4 kernels removed
    Ears Fresh Corn

    Strips Thick-Cut Bacon, Chopped

    Jalapeño, Diced
  • 1 pcs
    Small Red Onion, Diced
  • 1 tbsp
    Butter
  • 1 pcs
    Salt And Black Pepper To Taste
  • 2 tbsp
    Chopped Cilantro For Garnish

Directions
  • Cook the Bacon

    Place a cast iron skillet over medium heat and add chopped bacon.
    Cook until crispy, about 6–8 minutes, then transfer bacon to a paper towel-lined plate. Leave the bacon fat in the pan.

  • Sauté the Veggies

    Add 1 diced red onion and 1 diced jalapeño to the skillet with the bacon drippings.
    Cook for 3–4 minutes until softened and slightly caramelized.

  • Char the Corn

    Add the fresh corn kernels and 1 tbsp butter to the skillet. Stir occasionally and allow some kernels to lightly char for added smokiness.
    Season with salt and black pepper to taste.

  • Finish and Serve

    Stir the crispy bacon back into the skillet, squeeze in the juice of half a lime, and toss everything together.
    Top with chopped cilantro if desired and serve hot alongside your BBQ mains.
