- Prep the Cauliflower
Slice the cauliflower into thick, even steaks. You should get about 3 to 4 solid pieces from one large head. Save the florets that fall away for another use.
Brush both sides with olive oil and season with smoked paprika, chili powder, salt, and black pepper. - Grill the Steaks
Preheat your grill to medium-high heat. Place cauliflower steaks directly on the grill grates and cook for 10–12 minutes per side, or until they develop a deep char and are fork-tender. Be gentle when flipping to keep the steaks intact.
- Make the Elote Sauce
While the cauliflower grills, mix vegan mayo, lime juice, nutritional yeast, and minced garlic in a bowl until creamy and smooth.
- Dress and Finish
Remove the steaks from the grill and immediately brush generously with the elote sauce. Sprinkle with chopped cilantro and vegan cotija (or crumbled seasoned tofu).
Serve with lime wedges on the side for squeezing. - Serve and Enjoy
