- Prepare the Garlic-Lime Butter
Melt 4 tbsp butter in a small saucepan. Stir in garlic, lime juice, zest, smoked paprika, and a pinch of salt. Simmer for 2 minutes, then remove from heat.
- Grill the Oysters
Preheat grill to high heat. Place oysters cup-side down directly on the grate. Grill for 5–7 minutes or until they pop open. Carefully pry them open with an oyster knife.
- Add the Butter and Finish
Spoon garlic-lime butter into each open oyster. Let sit on the grill for another minute to sizzle and infuse flavor.
- Serve and Enjoy
Top with cilantro and serve immediately with lime wedges and crusty bread. Bold, briny, and buttery all at once.
