- Marinate the Chicken
In a bowl, whisk together honey, chipotle peppers, vinegar, smoked paprika, and olive oil.
Season chicken thighs with salt and pepper, then place in a zip-top bag with half the marinade. Reserve the rest for basting. Marinate for at least 30 minutes. - Grill the Chicken and Pineapple
Preheat the grill to medium-high heat.
Grill chicken thighs for 6–8 minutes per side, basting with remaining marinade until caramelized and fully cooked (internal temp 165°F).
Sprinkle brown sugar over pineapple rings and grill for 2–3 minutes per side until charred. - Serve and Enjoy
Plate chicken thighs with grilled pineapple on the side. Drizzle extra honey-chipotle glaze over the top for a sticky, spicy-sweet finish.
