- Marinate the Beef
Mix soy sauce, brown sugar, sesame oil, rice vinegar, garlic, ginger, pear, and gochujang in a bowl. Add sliced beef and marinate for at least 1 hour.
- Grill the Meat
Preheat grill to high heat. Cook beef slices on a grill pan or over open flame for 1–2 minutes per side until charred.
- Assemble the Tacos
Warm tortillas and layer with grilled beef, kimchi, scallions, and a sprinkle of sesame seeds. Serve with lime wedges and a cold beer.
